Join us virtually on Wednesday, September 15 at Noon to learn about selling beef by the quarter, half, or whole. Carl Mitchell from M.L. Mitchell and Son Meat Processing in Walnut Cove, NC will talk about underutilized cuts of beef, how to maximize retail value, and matching cuts to retail market. We will look at examples of cut sheets for beef, and help you understand when a meat handler's license is required and how to get one.
